Looking for the following things to build a village without technology:

1. A stove that can be used to cook food (similar to a regular stove) or a fireplace for cooking, idk.

2. Toilet replacements, something natural that works clearly without running water.

3. Shower replacements (maybe something like a water tank and watering can)

4. Sink replacements are optional.

5. A gramophone or something.

As @LFact mentioned, Plumbob keep also has a whole load of medieval stuff- from water collection systems to beekeeping and animal raising if you want to make a whole off-grid world.
